Ingredients

200g salad potatoes

1 tin tuna, drained

120g chickpeas, drained

8 cherry tomatoes, halved

2 handfuls of lettuce, shredded

50g lemon mayo

1/5 yellow pepper, diced

1 inch cucumber, diced

Directions
Boil potatoes in salted water for 10 minutes
Meanwhile mix tuna with 20g of the lemon mayo
Meanwhile add all ingredients except remaining mayonnaise to 2 bowls, split equally
Top both with drained potatoes
Top with 15g mayo on each
